I'm still using an old 2.0 mega pixel camera so I've also been looking for a new one.. It depends on what you'd like to spend.. there are a bunch of fantastic cameras out there now.. some good middle of the road cameras are:

Fujifilm Finepix Z1 5.1MP with 3x Optical Zoom
I use Adobe Photoshop for photo editing, it has soooo many awesome features and it's fairly easy once you get the hang of it.
