Ha, ha, ha, white gravy is the good kind of gravy. I don't think it's very popular up north, as my NY friends turn up their nose at it. Basically a good white gravy is chicken (beef, bacon, sausage ect... or whatever meat you just pan fried) grease and drippings, with a few tablespoons of white flour, salt & pepper, with a lot of milk.
White gravy done the right way is good on pretty much everything.
