I think you should get her...at least you and your husband go meet them, play with the dog a little to see if you notice anything abnormal. Other than that, I don't see anything thus far that says she's shady...and it's not like you're giving her any money until you've met, correct? It is good you are being cautious and asking questions and she doesn't sound like she's offended or anything by your questions, answering them all so that's also good.
Hope you get to meet her soon...I think you'll be able to get a better gut instinct when you do...but it sounds good to me!!!
