I'm a dog groomer and we did a lot of lessons on dogs that behave just like that. She may simply just be scared of the grooming atmosphere. I'd introduce her slowly to one groomer. Go once just to meet the groomer, go back another day and do bathing, then go again and try to do the full grooming. Not all groomers would go for this. If they care enough the would and if you were in my area I would gladly work with you. I would call around and see if anyone is willing to work with you. It can't hurt to just ask.
