What comes to my mind when you say western theme...that I didn't see mentioned in your list...cowboy boots, hats, horse shoes. I also think of red/white gingham. Centerpiece wise you could consider oil lamps or mason jars with votives or tea lights. Perhaps you could find cowboy hats to fill with mints as wedding favors tie with tulle.
Just throwing ideas out at ya...you seem very creative. Creative and PATIENT...cause brides can go nuts over wedding plans.
PS I, also, think bulls with the western theme but honestly have no clue how you would incorporate a bull into a wedding. The groom perhaps.
