I actually e-mailed my Nature's Variety rep about this last night and got a response from her today. Here was her reply:

swear the meat looks already freezer burned)
The frozen has a year shelf life.
You are probably seeing crystals and not freezer burn. Freezer burn is
crackled and dry with Black on the edges. Freezer burn occurs when the
raw is cmpletley thawed out and re-frozen. Our medallions stay at -10
until they get to the store level...where they are kept at 0. The
crystals are normal and are the moisture being drawn out from the
veggies and fruits. Where it is humid is where you will have more
crystals. You will sometimes see a swirl color in the meat. This is the
organ meat vs. muscle meat.
