I take room temp cream cheese and dump it in a bowl. Beat on medium speed for a minute or two. Add some grated onion, bell pepper, and crushed pineapple (drained with liquid squeezed out of it). Mix thoroughly.

Dump mixture onto plastic wrap. Roll into log or form into ball and put into fridge until firm.

Voila! Cheese ball/roll thingie.

Sorry I don't know exact mesurements. I vary the ingredients depending on who I'm making it for. If I'm taking it to my MIL's I don't put as much onion because she doesn't like onions. If I take it to my parents I make two - one with pineapple and one without because my sister doesn't like it with the pineapple. I roll hers in crushed pecans instead.

I serve it with different types of crackers as well as celery sticks and carrot "chips"
