Try this-it's lowfat and yummy too!

Lowfat Cheese Enchilada Bake
Nine 6" tortillas
1 large diced tomato (or I use the smaller/medium can of Petit Diced Tomatoes)
3 green onions, chopped
1 large clove garlic, finely chopped
1 cup lowfat shredded colby-jack cheese
16 oz container non-fat cottage cheese
1 jar Enchilada sauce
1/2 cup lowfat shredded cheddar cheese

Preheat oven to 350. Chop green onions, garlic, and tomato. Mix green onions, garlic, co-jack cheese and cottage cheese together in small bowl. Arrange 3 tortillas in bottom of a 9x13 glass baking dish. (Tip-I cut mine in half with a pizza cutter to get them to fit better) Top with 1/2 the cottage cheese mixture, 1/2 the tomatoes. and then 3 more tortillas. Repeat with the other half the cottage cheese mixture, the rest of the tomatoes, then 3 more tortillas. Pour enchilada sauce over the top, and top with shredded cheddar. Cover with foil, bake 25 minutes. Uncover, bake 10-15 minutes more. Let stand 5 minutes, and it will be easier to serve.

Serve like you would cut and scoop out lasagna, along with a green salad topped with tomatoes, jalapenos, olives, and any other veggies you like!
