I have 'The Whole Foods Market Cookbook" which has been great because not only does it give you recipes, it always explains what some of the foods ARE and how to prepare them. This one also includes meat dishes (organic, free-range)
I also have:
Becoming Vegetarian
The Essential Vegetarian Cookbook (I love this one too)
Both of those contain no meat recipes, but DO have recipes that include dairy products.
