I lost 60 lbs on South Beach -- it is very easy and the menus are easily modified to be simple or vegetarian.

The most important thing to remember is to not think of it as a "diet." It will be your new way of eating. For the results to stay one must change their eating habits forever.
This is why I like South Beach, it is very easy to move between the three phases.
