Smile A savory recipe...NOT SWEET!

I have made the candied/marshmallow yams several times, but sometimes during the holidays it's just too much sweet! A friend of mine gave me her mom's recipe-her mom is from the east coast, married a South African, and lives in New Mexico, so I couldn't tell you exactly where it came from... but it's the BEST yam recipe I've ever had!

5-6 yams, peeled, and cut into 1" cubes
olive oil
1-2 tsp rosemary (dried), or 3 sprigs, fresh
Kosher salt
garlic, diced-I used about 4 large cloves
1/2 cup pine nuts

Preheat oven to 350 degrees

Pour a generous amount of olive oil into a baking dish, add cubed yams and garlic pieces, and toss to coat. Season with salt and rosemary, stir. Drizzle olive oil over the top, and roast in oven about 35 to 45 minutes until lightly browned, stirring every 10-15 minutes. Top with pine nuts, bake 10 more minutes. Top with additional pine nuts and parmesean reggiano cheese to serve.
