I make this every Thanksgiving.

Candied Sweet Potatoes (or Yams)

2 lbs of sweet potatoes (about 6 med potatoes)
1/3 cup brown sugar (packed)
3 tbs butter
3 tbs light cream or milk
1/2 tsp salt

Cut potatoes crosswise into 1/2 inch slices. Place in pan of water. Bring to boil. Cook for about 30 to 35 minutes or until tender. Drain and Slip off the skins.

In medium skillet, combine brown sugar, butter, cream and salt. cook over medium heat stirring constantly until smooth and bubbly. Add sweet potato slices to pan, stir gently until glazed and heated through. Pour sweet potato and sauce into casserole dish. Place marshmellows on top. Put under broiler or high temp oven for just a few minutes.
