Hmm, it seems like you all make sweet potatoes for dessert. I make them as a side dish with my main course.
I like to slice them in rings and place them in a baking dish, season, and cook under a roasting chicken. The potatoes get soft and juicy and flavourful from the chicken.
Citrus-lime mashed yams are delicious, too. I peel and boil them, mash them up with butter, add salt, pepper, lime juice, and orange zest. It's a really yummy fresh dish.
I'm a huge fan of sweet potatoe fries! I cut the yam into fry-like strips, toss them in a little olive oil, season with salt, pepper, and a dash of brown sugar, and bake until crispy.
