Here is one that has been passed on to me by a great friend down South....I get asked to make this all the time.


Sweet Potato Casserole
Bake potatoes first - I like to wrap them in foil and bake them like you would a white potato for about an hour or so. After they cool a bit the skin is easy to peel off and they are soft and ready to mush!)
Ingredients
1 stick butter (soft)
1 T. of vanilla (use real please and not the imitation)
3 cups swet potatoes (I buy 4-5 large sweet potatoes)
1/2 cup sugar or Splenda
2 beaten eggs or egg substitute
1/4 cups evaporated milk
Topping
3/4 cup brown sugar
1 stick hard/cold butter
1/2 cup flour
1 cup chopped pecans

Mix potatoes, sugar, vanilla, evap. milk, eggs and butter. Pour in buttered casserole dish. In a separate bowl combine brown sugar, flour, butter and mix well with fork to make crumbs. Add pecans to the mix. Sprinkle on top of potato mixture and bake for 30 minutes at 350 degrees (bubbly).

Enjoy - I could just eat a bowl of the topping alone - it's yummy.
