That is for royal icing. If you want an icing that will turn smooth and hard and not smear off, that is the kind you need to make. You can find meringue powder on the cake making aisle at Michaels. You can also make it with egg whites. I have a recipe if you want it. Let me know.

You can also make egg "paints" out of egg yolk, a few drops of water, and a few drops of food coloring. This is the kind you paint on the raw dough before baking. It makes a really pretty smooth glossy (but sheer--like watercolors) color on cookies.
