Congratulations on adopting her. I'd leave the anal glands to the vet or groomer. The food sounds good, and you can offer her fruit and veggies. I'd keep her in an Xpen and just leave the crate their. If she wants to go in she will. I wouldn't push the issue as she seems really traumatized by it. Best wishes nursing her back to health.
