I know it is hard to believe, but No they really do not know better. they might know that you are going to yell and punish them, but they don't know why.
Somehow you are not communicating with them. You just have to keep trying until you find a way to get the message across, and the best way to do that is to catch them in the act. Which means keeping them in your site.
