The tails are docked within the first week after the pup is born, so you won't have to worry about that.
On pups I use a J&J baby shampoo--just make sure when you bathe you keep the little one warm.
As far as food, start out by keeping the pup on whatever food it is accustomed to eating with the breeder until the ajustment period in you home is over. In the meantime, research what food you feel is best and then gradually swap over.
