Gosh, since he's so used to using a litter pan, I'd hate to have to retrain him just to board him.

Have you thought about getting a pet sitter instead of boarding him? It will be so much easier on him if he can stay in his own home anyway.

If that's not doable, I'd try to find someone who would board him with his litter pan.
