What about just adding fleece blankets to the top of the bed for her to adjust to suit her? You can buy fleece by the yard, cut off the ugly edge and throw it in with her bed. Fleece will not ravel so you don't have to sew anything and plain colored fleece isn't too expensive!! Good Luck!! The only fabrics that I could think of that might with stand the digging for awhile is like duck cloth or really heavy denim, yet it wouldn't be very comfortable!!
