Just my two cents...
It is a really long flight. Hong Kong is great, but, if you have your baby there with you, you will severly limit your sightseeing abilities. Also, that is a LOT of work to get a dog through customs and all the red tape. Then you have to go through it all over again when you come back.
On a side note, take a really good camera with a tripod for night shots, as the city is amazing!!!! One of my all time favorite places...but I have to say Sydney is #1!!!!!!
