Simply like that: I love you but I need some time to myself sometimes.
Just tell him that sometimes for a relationship to work and not lose it's spark each person in it needs to do things on their own or with other people, they need time away from each other so when you finally do see each other it's a great feeling. He sounds like a great guy though, in most cases it's the other way around, where the girl wants to spend more time with the guy, etc. My bf and i also like to do things together but with shopping sometimes i just like to go by myself actually and no one else cause i like to take my time, and i don't like to be rushed lol So i think i am going xmas shopping alone or with him if he has the patience, which for the most part he does. He just waits for me in the game store or something
