I thought both dam and sire had to be registerd with AKC in order for the litter to be registerd with them also

As far as getting the papers from the previous owner....do you know where she lives? Can you pay her a visit? Did you have a good relationship with her when you got Baby? Otherwise, I don't know how else to help.
