Okay - I'm finally back to post this recipe.
Cranberry-Wild Rice Stuffing
(Serves 12-14 -- makes about 6 cups or enough for a 10-12 pound turkey, but also great by itself.)
1/2 cup wild rice
1/3 cup brown rice
1 cup chopped cranberries
2 Tbsp brown sugar
1/2 cup chopped scallions
1/2 cup slivered toasted almonds
2 Tbsp grated orange peel
1/2 cup melted butter
1 tsp salt
1 tsp pepper
Combine wild and brown rice and place in a saucepan. Pour boiling water over rice and set aside, covered, for one hour. Then drain the rice, add fresh boiling water to cover by half an inch. Bring to a simmer and cook gently until rice is soft but not mushy. Drain well and set aside. Mix cranberries with sugar. Combine cranberries with rice and add the remaining ingredients.
