Pretty much every "allergy food" is quite a bit lower in protein, which is not the greatest nutritionally - so maybe that's why you thought of it. If it were me, and I found an allergy food that worked, I would supplement the protein content by adding in the same protein as contained in the food. In other words, if she was on Venison/Potato kibble - I'd add in real venison. Or, if there is some other protein that you're sure she is not allergic to, you could add that in. Personally, I wouldn't keep a dog on a low-protein diet long-term unless there was just no way around it.
Have you thought about using NV's kibble/canned (Instinct line) foods at all? They're pretty clean kibbles - and they have better protein ratio.
