I love teaching dogs to do tricks. I had a dalmation and the funniest trick I taught him was to play dead. I would say bang! and he would roll over on his back and stick his paws in the air. He had a huge tounge so it would hang out the side of his mouth and just added to it.
To shake hands is pretty easy, you just teach them to sit first which you already have. Take their paw in your hand and say shake! and give them a treat. Maybe it will be harder since you have taught him to box first but that is my advice.
