When teaching Coby to lay down, he discovered that if he "threw himself" down to the ground, often his paw would hit my hand and knock the treat loose.
Tricky boy.
When teaching the sit command, I'd also try the wall. But also make sure that you're moving the treat over the nose very slowly. It should cause him to move his head more than immediately think he needs to back up not to miss anything.
