These are from my grandmothers collection....she never uses a recipe anymore, just this and that, so I hope they make sense!

Fried Apples
Wash apples, leave peel and core and slice. Fry in butter in big skillet. Add a pinch of salt and cinnamon.

Apple Upside Down Cake
Have a layer of fried apples in skillet. Mix1 cup sugar and 1 stick butter together, add 1 egg and 2/3 cup milk (more or less if needed). Sift 1 ½ cup all purpose flour, 1 tsp. baking powder, ¼ tsp. salt together and add to flour mixture. Beat well and pour over top of fried apples. Cook at 375 about 45min or until done. Turn cake out onto a large plate.

Fried Apple Pies
1 qt. canned apples OR fresh cooked apples (cooled)
Drain most of juice from apples. Put into a large bowl and add 1 cup sugar and ½ cup brown sugar, 2 TB flour, 1tsp cinnamon and 1/4tsp. allspice.
Dough: 1 cup self rising flour, 1 cup all purpose flour (or 2 cups all purpose flour and ½ tsp baking powder and 1/4tsp salt). 3TB sugar, 2 TB shortening. Mix together like pie dough. Then add 1 beaten egg and enough milk to make a dough that is easy to handle and roll out.
Divide into pieces the size wanted for pies. On a well floured pastry sheet, role dough out into a small circle, put apples and a dab of butter on one side of circle of dough. Turn the other side of dough over and seal tight around edges of pie. Have shortening in a big hot skillet. Turn the heat on Med. to prevent burning (adjust heat as needed). Cook 2 pies at one time. brown on one side turn and brown the other side. When dough is done, place pies on a paper towel to drain and cool.

Apple Dumplings
Peel, core and quarter 8 apples
Dough: 2 cups all purpose flour
½ cup shortening
2 tsp baking powder
½ cup milk
Mix like pie dough, divide into 8 parts. Put on floured pastry sheet.
Put apples into center of dough. Fold dough upward around apples and place folded side down on a oiled cake pan.
Syrup:
2 cups granulated sugar
½ tsp. cinnamon
2 cups water
½ cup butter
Boil together for 5 minutes. If mixture starts to boil over slightly turn down heat. Pour over dumplings and bake at 350 for about 25min then spoon syrup over dumplings and cook 20 minutes longer or until apples are soft and dough is golden brown. You may also add thinly sliced apples in the pan with syrup for more apples and flavor. Note: I put a small amount of the sugar and cinnamon and a dot of butter on apples before I fold the dumplings over.
Serve hot with whipped cream or vanilla ice cream

This one below is from some apple orchard, can't remember which one, so I don't know who the credit goes to.
Apple Chips
2TB lemon juice
1 sweet crisp apple
2 tsp confectioners sugar
heat oven to 200. Line a baking sheet with parchment paper and set aside. Fill a med bowl with ice water and lemon juice and set aside. Slice the apple into very thin slices and let soak in the water bath for 5 minutes. Place apple slices on prepared baking sheet, sprinkle with sugar, and bake until crisp and dry - about 90 minutes. Cool and serve.
