  Here's another version of the "Cottage Cheese" loaf...  it's one of my favorites.  My sister uses rice krispies instead of special K and says she likes it better...  leftovers are great for "meatloaf" sandwiches too...

 Cottage Cheese Roast
 
 (a variation of Special K Roast)
 
 2 pounds of cottage cheese (this seems like a lot -- maybe 2 quarts?
 
 1 onion – chopped and sautéed
 
 3 pkgs George Washington Broth
 
 5 eggs, beaten (or egg beaters)
 
 ½ cup walnuts, chopped
 
 ½ cup milk
 
 4 cups Rice Krispies
 
 1 tablespoon soy sauce
 
 I put the onion in a 2-cup measuring cup with a sprinkle of water, cover with plastic wrap and microwave approximately 2 minutes to sauté.
 
 I think you could use a pkg of Lipton onion soup mix (dry) if you don’t have the George Washington Broth packets.
 
 Mix all ingredients together and pour into a sprayed 9x13 pan.  Bake in a 350 degree oven for at least one hour or until fairly firm and lightly browned.
