A lot of a breed's personality characteristics are born in. For example yorkies are a high energy/high strung breed, they need lots of human interaction and should not be left alone for long periods of time, they are typically harder to train than other breeds. These are all characteristics of the yorkie breed. These things were not learned from their owners.

HOWEVER these characteristics do not apply to every single yorkie. Some of your yorkies were very easy to train. Some of your yorkies are not high energy at all. This does not mean that the breed characteristics are wrong. But there are variations to every rule.

Those of us who have owned pittbulls who are/where perfectly friendly and sweet for their whole lives are lucky to have a sweet pet like that. But it isn't a bad idea to be on guard around strange dogs especially ones who have agressiveness as a common breed characteristic. Just as a percaution...not to bash pittbulls.
