I worked at an SDA hospital for 16 yrs and most of the people I worked with were SDA also. They didn't serve meat at all until a couple of years before I left, and they never served meat in the cafeteria, so I know a lot of their foods, LOL. I know they use a lot of Special K and there's a loaf that I think is delicious that a friend makes and calls "Cottage Cheese Loaf" ..here's that recipe and a couple others that are meatless:
Cottage Cheese Loaf
1 qt cottage cheese
1 cup chopped walnuts (optional)
4 eggs
1/4 cup melted butter or margerine
1 pkg onion soup mix
4 cups Kellogg's K cereal
3/4 cup water
Mix it all up and bake in a greased dish for 1 hour at 375 deg. F.
Cashew Roast
3/4 cup raw cashews, broken
1 can chow mein noodles
1 small can water chestnuts
1 cup chopped onion
1 cup chopped celery
1 can mushrooms (save juice)
1 can water, including juice (use mushroom can to measure)
1 can cream of mushroom soup
Saute onion and celery in oil or margerine. Add nuts, 1/2 of noodles, mushroom soup and water to sauteed ingredients. Place in buttered baking dish. Sprinkle top with rest of nooles. Baek at 325 deg F. for 45 minutes.
Holiday Loaf
1/4 cup margerine
1 medium chopped onion
1 pkg Gerorge Washington broth (dark)
1 tsp. chicken-style seasoning
1/2 cup chopped nuts
3 eggs
1 pint cottage cheese
2 1/2 cups Kellogg's Special K
1 (13 oz.) can soyameat chicken style, diced
Saute the onion in margerine. Add seasonings and broth. Combine with other ingredients. Bake in greased loaf pan for 1 to 1 1/2 hours at 350 deg. F.
