I'm not sure I can be much of a help on the hiking of the leg part (because I have a little girl) but I have seen pictures where people have put a potty pad around something standing up like a paper towel holder and put that on the pad so they will aim for that. It may also help to put a belly band on your boys that like to mark.
With pooing off the pad, you could put the pad in a container so they know when they're off of it cause they would have to literally step out. We use a washing machine tray and tape down paper in it (she was already used to going on paper so I figured why change that?). Below is a picture if that helps. (Haha! I caught her going!
