Chloe never "bites", but when she's playing, sometime's she'll put her mouth on my hands. When that happens, I gently wrap my hand around her snout, give a gentle wiggle and say in a deep voice "no bite!" She usually rolls on her back when I do this. Then when I let go, she licks my hand, and I say "good girl". You do have to show that you're the one in charge, and he'd best not forget it.
