It probably wouldn't eat the pinky - it also depends on the species and size....you are feeding it right....you could try a locust too.
Make sure it has a water bowl with spring water in it, it needs water, and also must have it for a successful moult. Keep substrate dry and check it has no uneaten food or poo or you will get mites on it which will kill it. Never disturb it during a moult - it will die of shock.
I will be able to tell you more once I've seen a pic....sounds as though it is an adult now if the moulting has slowed down. It is more than likely a Grammestola Rosea, or a Pink Toe, or Red Knee - Kenny will give you the proper names....

I told my son some one is on Y.T. who knows their stuff on spiders, so he wanted to know what is the best bedding to use, he's using bark from the pet store, is there something better.......he was cleaning the cage regularly up til about a year ago, then some boob at the pet store told him NOT to clean the cage because it doesn't like his habitat disturbed...I just told him he has to clean it or they'll get mites, so he's going to do it tomorrow. Thanks for that info....he also wants to know what he can do to improve his habitat...any info will be appreciated...Thanks..
