I boil mine in water w/garlic powder till they are tender and you can pull off a leaf easily. Then dip the ends of them in mayo or butter/lemon and pull across your teeth. When you get down to the heart, I cut that up and with a fork just dip it into the dipping sauce.....yummmmm.
Oh....another thing I do before cooking them is to cut off the thorn on the ends of each leaf....makes it much easier to eat..
