That's sort of how mine is too...only I don't marinate it; I coat it with a little flour first and then sear it in a pan on the stove top, then into the crockpot with some beef broth, red wine and seasonings (whatever you like...I use lots of Montreal steak seasoning, garlic, bay leaf, oregano, marjoram, summer savory, etc....) and sometimes I'll add some potatoes, onions and carrots to it. And yes, you can make gravy with the juice it's cooking in!
You could also do something similar and use it for shredded beef tacos or a shredded beef salad.
