I boil the beef marrow and knuckle bones first. They do NOT splinter after cooking. The marrow is in the middle of the bone and is very, very soft, and easy to push out. NO need to scrape. The marrow is a VERY fatty part and can cause diarrhea. The don't need that fat. They just need to chew on something they love and can't eat.
