Just noticed this thread--sorry--hope it turned out! The above advice is the best! I only use a springform pan (they are fairly cheap at the local stores) and they come in several different sizes. I also wrap foil around the bottom and low on the sides just to be on the safe side before putting in the water bath. I have several great cheesecake recipes. Let me know if you would like any of them.
