When a puppy is taken away from its mother before 8 weeks, you will see a lot of behavioral and socialization problems. Biting being one of these. The time between 5 and 8 weeks is important because this is when puppies learn about biting and submissiveness from its mother and its littermates. By playing with the others, a puppy learns about bite inhibition. This is something that you are going to need to teach her. When she bites too hard, let out a high pitched YIP noise like a puppy would and jerk you're hand away like you're hurt. You're going to feel silly but this really works. Then remove your hand and walk away.
I have a rescue that came to me at just under 8 weeks and she had the same problem. This method worked really well for me. After just 2 days of doing this, she stopped biting except for very gentle mouthing that she does when she plays with me.
She may also develop problems with barking and accepting your position as the leader later. But those are other things that you can work with her on.
Good luck, this method really does work.
