A lady at work brought her own recipe in Friday for us to try. It's Mexican lasagna. She gave us her recipe:


2 lb ground beef, browned with onion, and well drained afterwards
6 large flour tortillas
2 pkg taco seasoning
salsa
shredded Mexican mix cheese


She sprayed a 9X13 casserole dish with Pam then put enough of the tortillas on the bottom to cover it. (She said to cut the tortillas to fit with kitchen shears) Then layer with the meat mixture, salsa then cheese and layer finishing up with the cheese. Bake at 350 until lightly browned and bubbly.

We had a great lunch and served it with shredded lettuce, black and green olives, salsa, cheese, tortilla chips and ice cream for dessert.
