I am sure she hears things during the night and barks bc she is trying to protect you. Could you get some sort of sound machine thing to drown out background noise from outside?? Also, I know a water bottle works well...whenever she starts barking, squirt her in the face with some water and tell her "no bark." You could keep one by your bed and it would probably be more convenient than the pennies or the bowl things.
