That is probably how they do it, but I am "challenged" in the kitchen!

My friend in Colorado makes "jerky" [yuk!] and my husband
loves it! I don't eat beef, deer, elk, etc. so that's probably why it isn't good to me and we never let Toto try it because of the spices. If you try the chicken or hear from someone who does, please let me know? I would probably give the chicken a try.
