Since they are not set up to really eat grains they take much longer in the digestic tract. The raw can have bacteria, bones, etc. in it that is no problem when eaten alone as they would in nature as it passes through quickly. But when you combine it with grains and slow the digestion way down there is more potential to cause harm.
I haven't read my BARF book in awhile, but I beleive that is the explanation.
