It sounds very much like a urinary tract infection. I would not worry too much for now. If she stops peeing or starts acting sick or like she is in pain, she needs to go to the Emergency Vet to rule out stones and/or obstruction. Otherwise, call your regular vet first thing in the morning.
Until then, try to force water down her if you can. You could make up some chicken broth (no added salt or onions, just boil chicken in water) and see if she will lap that up.
