If you cannot keep and eye on her she should be confined in some way whether it be kennel or playpen or baby gates. I have gone as far as doing an umbilical cord. Tieing a rope from her harness to my belt loop that way she goes where I go and she can't run and hide.
As far as eating her poop its not unusual. You can purchase something at the pet store called deter. I haven't had this problem but they also say you can mix pumpkin in her food and that can also help. I hope this helps. Just try to be patient with her. I hope this helps.
