Hollywood will use any means necessary for free publicity I think.

Understand that this is a tree-way street. For this to work there has to be:
1. The celebrities who tell the press their lives. They depend on the press to write about them, so they get their name branded and get more jobs.
2. The press to write about celebrities lives. They depend on the celebrities to tell them good stories so they can sell magazines.
3. The people who talk about the celebrities and what they do with their lives. As long as people care about the celebrities, both no. 1 and 2 will survive.
If you don't like it - ignore it and don't buy their magazines. That is the only way to send the clear message that this does not interest you.
I also don't know who Katie Holmes is - but hey, I also have no clue to what the name of the lady in no. 4 on my street is called - and they have equal importance to me.
People who choose acting do so because they love acting hopefully. So the industri should be able to survive without gossip about private lives.
IE - I know nothing about Max von Sydow or the girl who played Megan in The Exorcist. Still it's a damn good movie and will stay so for many years still.
Even though I don't know anything about their private lives.
