One of my precious pups (may she rest in peace) was a stray I found and fell in love with. She was a beautiful brown and white papillon. I found her on Easter Sunday, so I named her Bunny and her birthday was on Easter. Bunny was so special, just as your little Gwen is. Gwen's whole life changed the moment you took her home. I agree with everyone else.....I think her birthday should be the day you got her.
