I like to dice up a large russet or two with skins on, throw them into a skillet with some olive oil, onions, broccoli and chicken/apple sausages, cover and simmer. Yummy.

Another quick and tasty one (if you like clams) is take a can of diced clams, broth and all, add 1 packet of McCormic creamy garlic Alfredo sauce mix (make according to directions, but use the clam broth as part of the milk) mix all together with fresh broccoli florets or peas and simmer till thickened. Boil some linguini or spaghetti noodles till done, drain. Pour sauce over noodles. mmmmm

Also a good quick one is buy Suddenly Salad ranch and bacon flavor. Cut up some tomatoes, cucumbers, broccoli and ripe olives. Make the Salad useing mayo and ranch dressing. Add the veggies. I like to add cooked chicken to this too. I sometimes make this up ahead of time. I also make cornbread or corn meal muffins to go with this dish. It's always a hit with company.

A quick Italian dish is to cut up 3 zucchini, half a large yellow onion (not the sweet yellow onions) 1 can Italian stewed tomatoes. Put olive oil in a pan and simmer the onions till clear, add zucchini and cook till almost soft, add the stewed tomatoes and some Italian seasoning and simmer. Put over cooked linguini. You can also add ground beef with the onions if you like, or this could be just an excellent side dish to go along with something you grill.
