| Cast iron pan - help me choose I saw at Ross last night a Wolfgang Puck cast iron pan with those raised ridges in them that make those lovely lines while searing a steak. However, on the packaging it said that it was covered in some substance (forgot what) that it did not need seasoning, and the directions of the back said for clean up use soap and water! Would this not eventually have the seasoned non stick surface of a traditional cast iron pan? It was only $11.99 and I wanted to get it, bc it's cast iron, but if it won't have the same qualities in the future then its pointless. Should I get it or should I pass? What other things should I be looking for in cast iron?

| I don't know about using any special coating - I would be suspicious. My old cast iron is so old I don't even remember who made it but I bought it on my sister's recommendation as to brand, though she had had hers at that point for 12 years and it was a handmedown from our grandmother. Who knows how old that old relic of my sister's is now but it has sure made many a meal over the many years it has served and surely baked much cornbread also. I don't know that you can ever do better than the regular old cast iron that you season yourself using the old tried and true first-time methods and then with use after use after use. I will never replace it with something else.

| I've heard Paula Deen has some cast iron out that is nice and already "pre-seasoned". I'm not sure what this pre-seasoning stuff is that you are describing on Wolfgang's. You're right, you should not be able to use soap and water on cast iron. I have my grandmother's cast iron. LOVE cast iron for steaks or hamburgers! (Oh, and potatoes). I've thought about getting a new one w the ridges for steaks also. You'll have to let me know which one you get and if you like it.

| Lodge cast iron is supposed to be really good too Lodge Cast Iron Cookware - America's Original Cookware - South Pittsburg, TN USA. I was lucky and ran up on a yard sale and the 60 year old woman was selling her mothers cast iron. I got all three skillets for I think $7.00 and they are perfect. I don't think you can buy them like these..and never use soap and water on seasoned cast iron100_2849.JPG

| I don't think I'd buy a "pre seasoned" cast iron pan. I'd be afraid of what chemical residues might be lurking. I would recommend going to a good ole fashioned flea market and find a good heavy pan, take it home scour it and "season" it yourself. | Forgot to mention the WP one had an enamel or ceramic coating on the outside. I guess I went with my gut last night and didn't get it, and seems to be the vote here as well. Does anyone have a regular CI pan with the ridges? I'm thinking it would be better to get the plain one for it's not a uni-tasker.

| I love cast iron pans. My mil didn't have use for her huge cast iron pan and threw it away!!! If I known she didn't want it I would have scooped it up in a heart beat. It was her mothers also.
