Ha! Great topic!

My Mom's method: Fill a large pot with cold water, add some salt (makes the water boil faster and keeps eggs from cracking) and room temperature eggs. Bring to a boil and simmer for 10 minutes. Then turn off the burner and remove the pot from the heat, cover and let stand for 10 minutes. Then I set the pan under the faucet and run cold water in till cool and let them set in water till I'm ready to peel them. If I need to store them, I take them out of the water and place in a ziplock in the fridge.

The trick to peeling them later is: Take them out of the fridge and put them back into warmish water and let them warm up. If you crack one and it's hard to peel, put it back in the water cracked for a few, then try again. Egg shells are porous, so they dry out when taken out of the water.... the warmer the egg the faster it will dry out and become hard to peel. So you'll have to experiment with the timing....

My best method: WalMart used to sell an eggshaped microwave egg cooker.... best tasting HB eggs you could ever ask for on the planet.... time varies on egg temp and microwave strength.... on an 800 watter it takes 14 minutes to cook on high and 2 minutes to rest, from the fridge (room temp eggs take 2 minutes less cook time) then into cold water... same rules for peeling as above. Cons: only cooks 4 eggs at a time. (I have seen this in some common mail-order catalogs) Ha! Seems Target has it now: NordicWare Egg Boiler : Target

Next best method: I have an electric model egg cooker that does 6 eggs at a time, still better flavor than the boiled water method.... I like the timer bc I can do other things without having to watch the pot!
